Tamarind Chutney Ingredients:

Ginger Powder | 1 tsp |
Directions for Chutney:
Step 1: Place the tamarind in a bowl and cover it with 1.5 cups of hot water. Let it soak for about 30 minutes to soften.
Step 2: After soaking, use your hands to break down the tamarind and separate the pulp from the seeds and fibers. Strain the pulp through a sieve into a separate bowl, pressing down to extract as much pulp as possible. Discard the seeds and fibers.
Step 3: Pour the tamarind pulp into a saucepan, add dates paste and add the jaggery (or sugar) and a pinch of salt. Cook on medium heat, stirring continuously until the jaggery (or sugar) dissolves completely.
Step 4: Now, Add the cumin powder, red chili powder, black salt, and ginger powder to the tamarind mixture. Continue to cook and stir for 15-20 minutes until the chutney thickens to your desired consistency.
Step 5: Once the chutney reaches your desired consistency, remove it from the heat and let it cool to room temperature.
Store:
Transfer the Tamarind Chutney to a clean, airtight container and store it in the refrigerator. It can be kept for several weeks when refrigerated.
Serve:
Enjoy it with samosas, pakoras, chaat, Dahi Bhalla, or as a dipping sauce for various snacks.
